And for my first trick...

When considering what recipe should be my first to try of the new year, I thought about foods that make me say "I wish I knew how to make this!"

Soup is something that I often order when dining out but rarely eat at home. I have yet to find a soup recipe that tastes good enough for me to spend the time making it.

I turned to Pinterest (one of my inspirations for this blog) to help me find a recipe worthy of being my first of the year. Within seconds (love Pinterest!) I found the perfect food to kickoff this year right...

Feeling Inspired

I feel the need to share the inspiration for this blog to give some background for future posts. :)

My husband has been on a "what's your new year's resolution?" kick. This year, inspired by a co-worker's resolution to run 365 miles last year (averaging 1 mi per day), he has decided to run 150 miles by December 31, 2012 (averaging 3 mi a week). That's a great goal! I support him 100%, but I will not be joining him. A few years ago I tried to train for a 1/2 marathon in an effort to get in shape. By week 4 I had messed up both of my knees and was told by my doctor "not every person has a body designed for running." After six weeks of rehab to repair my knees--point taken. No running for me.

I like the idea of having a resolution and rather than my typical one (lose weight) which is normally abandoned by January 2, I thought it would be nice to try to pick one I could stick with for the entire year.

Given my new found love for Pinterest (seriously addicted), I am inspired to try all of the fun new recipes that I see posted every day. Instead of just pinning them to my Favorite Recipes board, I could actually get in the kitchen and create some of these culinary delights. As the idea continued to blossom, I realized there could be several other benefits including:
  • finding some new dinner recipes to add to the regular rotation (not sure how many more times we can eat tacos, spaghetti and sloppy Joe's...)
  • impressing my husband with some newly found cooking skills (or giving us food poisoning a few times which might convince him to hire a full-time cook!) 
  • providing a healthier option for meals (I might lose weight with a resolution after all!)
Thus, my resolution for 2012 was born!

I, Mrs. Nelson, resolute to try one new recipe a week.
